Motor cycling legend Giacomo Agostini drove a Williams FW06 in the British F1 Championship in 1979 and 1980. He also entered a couple of non-championship races in 1979, finishing 11th at Brands Hatch and 10th at Imola.

3 time World Superbike Champion Troy Bayliss drove the #12 Triple F Racing Holden Commodore VE at Phillip Island and Bathurst in the 2009 V8 Supercars Season sharing with Dean Fiore. He peaked with 29th in the Phillip Island qualifying race for the B-Drivers.

Ricky Rudd substituted for an injured Tony Stewart in the #20 at Dover in 2006. Rudd qualified the car and then replaced Stewart during the first caution period of the race.

I have made a simple query on my self-created Formula One database to list one-time entries of drivers for a specific team, but only those drivers who had at least one entry for any other team. I think that this should fit into the "They drove that car?" surprise category.
"Entry" means that it makes no difference whether the driver took part in the race or not, i.e. DNQ counts as well (but not DNA).
My database data starts from 1980 (I'm slowly working my way back towards 1950...), so this list starts from 1980.
Non-Championship rounds are not included.

I know Jean-Pierre Jarier later had stints at Ligier in 1981 and 1983 but his one-off outing in a 2nd JS7 at the 1977 Japanese GP is unique in that it was the only time prior to 1996 that a Ligier didn't carry the numbers 25 or 26. He only lasted 3 laps due to engine failure.

BTW, he wasn't entirely happy with the Shadow team during the 1976 season, so there had been rumours before the French GP that he would join the Ligier team, but eventually he stayed with Shadow until the end of the 1976 season.

Yes and the Ligier seat came down to a shootout between Jacques Laffite and Jean-Pierre Beltoise.
