Watching footage of the F1 races from the 1970s at Interlagos, that area of the track is so vast, and the corners so long and sweeping, it makes the cars look small and curiously slow.
One circuit I have not read too often in this thread here is Mosport. It is the second fastest circuit in the world, right after Le Mans and ahead of Monza even.
I really like how it sweeps up and down , especially the place right before Moss corner, a brutal compression as a breaking zone.

I always felt that it was unfairly criticised. Alright, it did not have great elevation changes, but there were some great corners, particularly the quick ones after the back straight.

It was a particularly great spectacle in the turbo days, when the sparks used to fly from the undersides of the cars. It's a pity it fell prey to safety concerns, after the startline crashes in '87.
Most of the F1 races held at the old Osterreichring were in some way memorable. I have seen footage of the '76 Grand Prix, and it was like a Formula Ford race at times. The layout of the track lent itself to close racing, particularly in slippery conditions.
my current favs (apart from the Nordschleife) are the Augusta International Raceway, Georgia and Meadowdale International Raceway with the Monza banking. Closely following is Bridgehampton, Long Island
Brands Hatch must be up there with the best circuits in the world. With its natural undulations, it's a real 'drivers' circuit. Pity it lost out on the Brit GP for last 20 years. It's also my local circuit so I could be biased!
While Its really hard to pick just one, I do have a few favorites:
St. Petersburg Indycar Circuit, Florida: This circuit, to my knowledge, is the only Airfield-Street Circuit to ever exist. The sheer variety the track possesses; from driving down a Runway, to racing along the gulf, to the couple of Purpose Built sections.
Palanga Street Circuit, This circuit... races down a freeway, features multiple tyre chicanes, and has both a pit lane as well as a fuel stop.... which is literally a gas station... Its such a crazy track!
The Isle of Man, Im not referring to the Snaefell Mountain TT Course Or Jurby's Airfield Circuit. Im referring to the entire country. One time or another, most all of the major roads on the Island have been used in some sort of motor race...
I could go on and on, but these are some of the best
