This is probably pushing it but the late Sir Stirling Moss returned to racing in the British Saloon Car Championship in 1980 and 1981, driving an Audi 80, he peaked with 2nd outright at Mallory Park in the first year and Oulton Park in the second.

1984 World Rally Champion Stig Blomqvist contested the Donington 1 Hour Endurance race in the 1990 British Touring Car Championship. He took over from that year's eventual Champion Robb Gravett in the Trakstar Ford Sierra RS500 and finished 2nd after spinning away the lead at the last corner.

Bobby Rahal drove a 2nd works Wolf at Watkins Glen and Montreal at the tailend of the 1978 F1 Season. He came 12th in the first of these and retired from the 2nd.

Nanni Galli

When Clay Regazzoni broke his wrist playing football with the Ferrari mechanics in the summer of 1972, the team called up Nanni Galli for the French Grand Prix at Clermont-Ferrand. Galli qualified near the back, finished a distant 13th, and retired from the cockpit a year later. He became a distributor for the Fruit of the Loom fashion company, which would sponsor the Williams F1 team, while Galli persuaded business associates the Benetton family to get involved with F1...

With Regazzoni still sidelined, Arturo Merzario was the next choice for the following British and German GPs. A member of Ferrari's sportscar team, Merzario had no single-seater background worth speaking of yet impressed everybody by driving to sixth place at Brands Hatch.

....Enough for Ferrari to give up on trying to persuade Mario Andretti to make back-and-forth trips across the Atlantic to race its F1 car, and Merzario was installed full-time alongside Ickx for 1973

Stefan Johansson
Stefan Johansson was becoming something of a Formula 1 supersub by the time he was summoned to Maranello in April 1985. The previous year, he'd proved capable of outqualifying Stefan Bellof at Tyrrell while filling in for the injured Martin Brundle, and had starred for Toleman in replacing alternately Ayrton Senna (a row over his move to Lotus for 1985) and Johnny Cecotto (injured).

He'd even contested the season-opening 1985 Brazilian Grand Prix in place of Bellof, whose management was in a dispute with Tyrrell. (Even though he was entered in a Toleman as well but they arrived with no tyre contract.)

In fact after the Brazilan GP he suddenly found himself to have become a Ferrari driver.... replacing the suddenly sacked Arnoux.
Interestingly at the following Portugese GP Stefan was again double entered in both a Toleman and a Ferrari (he actually drove for Ferrari)

He also drove 4 races in 1991 for Footwork, here at the Canadian GP (Footwork-Porsche V12, FA12) He retired with engine failure whilst running 13th.. (the other 3 races he DNQ'd)

1985 Indy 500 Winner and 1988 Indycar Champion Danny Sullivan drove an Alfa Romeo 155 in the non-Championship rounds of the 1994 DTM. He finished all four races with a best result of 4th at Donington Park.

Al Unser Jr made one NASCAR start, coming in the 1993 Daytona 500 driving for Rick Hendrick. It was a rough week for Al, he wrecked in his 125 mile qualifying race and was forced to an all white backup car for the main event, before yet again being involved in an accident during the 500 on lap 157. Started 40th, Finished 36th.

Markku Alen drove for Lancia in the 1980 Le Mans 24 Hours, sharing with Piercarlo Ghinzani and Gianfranco Brancatelli, oil pump failure put them out after 26 Laps.

Rauno Aaltonen

Before WRC was existed Aaltonen became the first Finnish European Rally Champion in 1965.. He was one of the first group of four inductees to the Rallying Hall of Fame, with Erik Carlsson, Paddy Hopkirk and Timo Mäkinen. Rauno was One of the original "Flying Finns" aand the fore-runner of 'left-foot braking.

He wasnt just about Rallying though.

In 1966 he won the Gallagher 500 mile (The Bathurst 1000klms forerunner) in a Mini Cooper S on his first ever trip to Bathurst.. Three days later he started the Southern Cross Rally in another Cooper S
In 1967 he won the Monte Carlo Rally in a Cooper S.

Oh and in 1964 he entered Le Mans in a works Austin Healey Sebring Sprite

He also did a round of the BTCC at Silverstone (The TT round) in 1970 driving a Cologne Capri.. He also did the Nurburgring 6 hours in 1970
Before he moved into cars as a teen he was a Powerboat racer of note, he then raced Motorbikes.
